Recipe Ideas

Coconut Pecan Pie

Ingredients:

1 cup granulated sugar
1 stick of butter (at room temperature)
2 eggs, beaten
1 cup Charleston Nut Company unsweetened natural flake coconut
3/4 cup Charleston Nut Company medium pecan pieces
1 unbaked 9-inch pie shell
1/2 cup Charleston Nut Company Fancy Jr. Mammoth Pecan Halves (for decoration)
Vanilla ice cream or whipped cream (for topping)

Preparation:

-Preheat oven to 350 degrees F.

-In a saucepan over medium heat, combine the butter, sugar, coconut, eggs and medium pecan pieces together.

-Pour mixture into the pie shell and arrange the pecan halves on the top as desired.

-Bake pie for 40 minutes.

-Recipe yields about 8 servings.
